Perfectly Plump Peppers: Roasted Quinoa and Veggie Stuffed Peppers!

Packed with superfood quinoa and vitamins and minerals, these stuffed peppers maximize on taste and are super healthy! The kids love to eat out of the pepper bowl and then eat the pepper! So cute!
Roasted Quinoa and Veggie Stuffed Peppers

Ingredients:
6 bell peppers, any color!
2 tbsp. olive oil
2 cloves of garlic, pressed
1 small onion, chopped
1 cup quinoa
2 cups water
1/4 cup sunflower seeds
6 basil leaves, chopped
5 Yelo tomatoes

Ingredients (cont.)
1 handful of spinach
1/4 cup freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese

Directions:
Preheat oven to 400 degrees.

In a small saucepan, add 1 cup of uncooked quinoa and 2 cups of water on medium heat with a lid. Bring to a boil, remove from heat and cover. Let stand 15 minutes The quinoa will absorb the water.

Wash, cut the tops off of the peppers and clean out the seeds and white insides.

Place the hollowed peppers upside down on a Pam coated cookie sheet and roast for 25-30 mins or until peppers are softened and browning.

The peppers will soften but at the same time brown, if that makes sense. Here is the "look ." If you overcook they will turn to mush and be impossible to stuff. Error on less time if you are worried.

Meanwhile, in a frying pan heat the olive oil low to medium heat and add garlic and onions.

When the onions start to become transparent, add the quinoa and sunflower seeds.

The seeds and quinoa get a nice toasted , nutty taste.

Turn up the heat and toast the quinoa and seeds a bit, while constantly stirring.

Add tomatoes, basil and spinach and mix well.

Mix mozzarella and parmesan together to create a cheese mixture.

Fill the peppers with layers of the quinoa mixture and cheese mixture. Ending with quinoa mixture on top.

Bake for another 5-8 minutes.

Coachella Mozzarella! Festival Fashion Meets Food!

The boho chic Coachella style channels a modern Woodstock vibe with cutoff jean shorts, crop tops, floral and braided headbands. For those of you who don’t know, the Coachella Music and Art Festival is held annually in Indo, CA, and consists of two weekend-long concert line ups! Celebrities flock to the hip collision of music, art and food!!

Ok, What about the food? Well, I hope you aren’t thinking all hotdogs, hamburgers and funnel cake! Coachella food style is also chic, and like the fashion, trend-setting. “Foodie heaven” is the term used by the LA Times. The food vendors cover everything from vegan, kosher and gluten free to pop-up restaurant fare, fine dining and international staples.

The Coachella food trend we will see on hip and trendy dining menus are Arepas! Eaten daily in South American cuisine, arepas are a flat bread made with ground corn flour and are eaten as bread or stuffed with cheese, avocado, jelly or jam. The Coachella favorite? An arepa stuffed with mozzarella and grilled…a Venezuelan grilled cheese!

Arepas are already finding their place on high end restaurant menus in San Francisco, New Orleans and New York City! Bobby Flay likes his stuffed with octopus and lobster salad! Ok, let’s start simple.

Here is an arepa recipe adapted from Tyler Florence’s Food network recipe! I like this one because it is simple with only 4 ingredients and other than being lightly browned in a pan, the Arepas are baked!

Coachella Mozzarella Arepas
Makes 4

Ingredients:
1-1/2 cups Arepa flour (Precooked corn flour found in Latin American grocery stores or sub white cornmeal)
1-1/2 cups warm water
1 tsp. olive oil
1 tbsp. olive oil, for pan when cooking

Directions:
Preheat oven to 350 degrees.
Mix flour and salt in a mixing bowl.
Slowly add water and tsp. oil and mix until dough forms.
Cover and let rest for 5 minutes.
Remove dough and knead, make sure the surface and your hands are moist with water.
The dough should be moist and easily malleable, but not sticky.
Separate dough into 4 balls.
Form flat round cakes 3-4 inches in diameter and 3/4 inch thick.
Add oil to the pan on medium heat and lightly brown both sides.
Place Arepas on a foil lined cookie sheet and bake 15-20 minutes or “until they make a hollow sound when tapped.”

Slice in half or cut a slit in one side and stuff with mozzarella while hot!

I forgot to add tomato snob to the mix. The distinction between San Marzano tomatoes versus a can of whole peeled tomatoes is one of taste. The San Marzano tomatoes are sweeter, picked only when ripe, and grown in the richest of soil in Campania, Italy. Once you start cooking with San Marzano tomatoes and taste the difference you will NEVER use plain, old, sour whole peeled tomatoes in a can ever again. Pay the extra buck! So what is DOP?

DOP is a further designation that stands for Denominazione d’Origine Protetta from the European Union for the processed product. These tomatoes are grown at the base of Mount Vesuvious in rich soil blended with volcanic ash. This soil produces DOP certified tomatoes that have few seeds and cook down perfectly! DOP is written on the label and means completely legit by the European powers that be. So now you know what DOP means on your San Marzano can AND you know what to look for next time! My faves right now are Ciao brand! You can crush them with a potato masher and use them for pizza sauce…naked!!! Just add your toppings and seasonings!

Super Breakfast!! Chia Kale Egg White Super Muffins!!

Why not add superfoods to our breakfast? Whether it is a quick healthy smoothie, a super muffin or a grab and go breakfast bar, the addition of superfoods gives us more energy for the day! This super breakfast gets us going!! Especially on Mondays!

Chia Kale Egg White Super Muffins

Ingredients:

2 tbsp. egg whites per muffin
(3 egg whites for 6)
1/2 cup chopped kale

Don't have kale? Use broccoli, spinach green pepper or any other veggies  you have!

2 tbsp. chia seeds
1/4 cup shredded mozzarella/cheddar cheese

Directions:

Preheat oven 350*
Spray muffin tins with Pam.

My kids love to help! Let them add the veggies, cheese and chia seeds! Are your kids not big on veggies? When kids get involved they will eat their masterpieces!!

Add kale, cheese and chia seeds to each.

Pour 2 tbsp. of egg whites on top of each tin.

Bake 20 mins or until egg is cooked.

Of course we sprinkle ours with freshly grated Parmesan cheese! Enjoy!

My Nuni’s Sicilian Empanadas! Broccoli Pies! A Quick And Easy Rosemary Pizza Dough With A Broccoli Filling!!

My Nuni, maternal Sicilian great-grandmother, made what she called “empanadas” or “broccoli pies”. Since it is impossible to replicate any of her creations, here is my version…For my Nuni!

Sicilian Broccoli Empanadas

Rosemary Pizza Dough:

Ingredients:

2-3/4 cups flour
1 small packet dry yeast
1/2 tbsp. sugar
1/4 tbsp. salt
1 tbsp.chopped rosemary or dry flakes
1 cup water
1 tbsp. olive oil
Flour for working surface

Don't like Rosemary? Leave it out! Still a great dough recipe for pizza, Stromboli and calzones!

Directions:
Mix together flour, yeast, sugar, salt and rosemary well with a wooden spoon.
Stir in water a little at a time. Dough begins to form. Work with hands
Add olive oil.
Cover bowl with a dish towel and let sit 3-4 hours.

Broccoli filling:

Ingredients:
1 tbsp. olive oil
2 garlic cloves pressed
1-1 lb. bag of broccoli florets
1 small onion chopped finely
Salt and pepper
1/2 cup shredded mozzarella
1/4 cup freshly grated Parmesan

Directions:
Put olive oil in a fry pan on medium heat.
Add pressed garlic then onions and stir for a few mins.
Add thawed broccoli.

Cover with a nice coat of pepper.
Add a few shakes of salt.
Mix all together.
Cover with a lid and stir frequently.

The broccoli will cook down. Chop up big florets with your spoon as you stir. If chopping fresh broccoli, chop small!

Put them together:
Preheat oven 400! With pizza stone inside oven!
Section dough in to 4
Roll out dough on floured surface into 4″x6″ ovals.
If too elasticy let it sit a min.

If your dough won't relax  roll it out a little bigger to around 1/8 inch thick.

Scoop mixture from pan into center of oval.
Add a handful of mozzarella and a shake of Parmesan.
Fold dough over and tuck and pinch all the way around

Pinch dough in a rolling motion to close dough.

Put 2 slits in the top of each.
Brush with a tiny bit of oil.

Bake 25-30 mins until golden brown.

Bethenny’s Mexican Chili

According to Bethenny,

“This is a popular recipe on my Web site. It substitutes ground turkey for the typical ground beef; or you can just skip the turkey if you want a vegetarian version. If beans bug you, you can even leave those out. It will still be good. This chili also tastes great the next day!

Ingredients
1/2 medium onion, chopped
Nonstick cooking spray
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper, to taste
2 cloves garlic, minced
1/4 each red and yellow bell pepper (or half a bell pepper of any color), chopped
1 small can of pureed tomatoes or tomato sauce (about 8 ounces)
1/2 cup zucchini, chopped
1/4 pound ground turkey breast
1/4 cup canned red pinto beans, drained and rinsed

Cooking Directions

Over medium-high heat, saute the onion in a nonstick skillet coated in cooking spray until soft. Add the chili powder, cumin, salt, and pepper.
Stir in the garlic and bell peppers, and cook until the peppers are soft and the garlic is golden but not burned.
Stir in the tomato sauce and the zucchini.
When all the vegetables are soft, add the turkey breast and beans.
Let the chili simmer for at least 10 or 15 minutes. The longer you simmer, the better the flavor.
Serve.”

This chili is awesome!! Plus it’s Friday!! Serve with Skinnygirl margaritas and tortilla chips for the perfect Friday happy hour! It is Lent…leave out the meat, no problem!
