Shrimp and Sausage Gumbo! Happy Mardi Gras!

“I wiggled my nose and… poof! a beautiful roux appeared!” said nobody ever!

A roux pronounced “roo” is the thickening base used in traditional gumbo recipes. The ultimate test of patience and perseverance, the flour and oil mixture is whisked constantly over about one hour so that the flour doesn’t burn. I was terrified to burn it, so I used a super low heat and slowly ramped it up.

It took about 1-1/2 hours…
Here is what I learned…

When the roux eventually turns a dark chocolate color, the rest of the ingredients are added. After 25 minutes of whisking, I was convinced that the mixture got lighter? At 45 minutes, I realized it was getting dark outside …not my poor roux. My burner was definitely on? Yes! And the moment it started smelling like burnt popcorn ? Yep, I burnt the roux! So I started over. This time I started on a moderate medium temperature instead of extremely low heat. The process went much faster and in about 40 minutes the roux was a dark chocolate color. I am not the most patient person, it probably could have been darker, redder, but it was delicious!

So my initial plan was to add the celery, okra, onions, and bell peppers to a few cans of San Marzano tomatoes. Totally my style. Maybe call it Sicilian Gumbo?? I was inspired to learn something new and to share it with you! How amazing to make a traditional Gumbo at home for your family!

Here is the recipe…

Shrimp and Sausage Gumbo
Makes one large stock pot

Ingredients:

For the Roux,
2 cups flour- 1-1/2 cups vegetable oil or Crisco

1 large onion, chopped
5 celery stalks, chopped
1 14 oz. bag frozen okra
2 green bell peppers (I used orange and yellow)
1/2 lb. hot sausage or andouille sausage (I used hot)
1 lb. raw shrimp, peeled and tails off
3-4 tbsp. olive oil
3 garlic cloves, finely chopped
1 6 oz. can tomato paste
1 32 oz. can diced tomatoes or 4 fresh tomatoes, diced
1 48 oz. can chicken broth
1 12 oz. bottle of your favorite beer
2 tbsp. chile powder
1 tbsp. cayenne pepper
1 tbsp. paprika
1 tsp. celery seed
1 tsp. onion powder
1 tsp. garlic salt
salt/pepper

Directions:

Brown the sausage in a frying pan.

Prepare all chopped vegetables and set aside.

Prepare the roux in a dutch oven or heavy pan or pot by whisking the flour and oil mixture at a medium heat.

Do Not Stop Whisking- Do Not Walk Away
The roux will get darker. When it is a dark chocolate color, remove from heat.

Heat olive oil in the bottom of the stock pot.

Add garlic and onions. Cook until softened.

Add celery, peppers and okra, cook until softened.

Add beer, chicken stock, tomatoes, tomato paste, and spices. Mix well.

Add roux and bring to a boil.
Cook for 1 hour.

Add sausage and shrimp. Cook until shrimp are cooked, approximately 5-7 minutes or until opaque.

Lemon Ricotta Cookies
Makes approx. 3 dozen cookies

1 stick of unsalted butter
1-1/2 cups sugar
2 eggs
2-1/2 cups flour
1 tsp. baking powder
2 cups ricotta cheese
2 lemons – grate zest and squeezed for juice (2tbsp. For cookies 1tbsp. For glaze)

Lemon Glaze:
2 cups powdered sugar
1/4 cup lemon juice
1 tbsp. of lemon zest

Directions:

Preheat oven to 350 degrees.

In a small mixing bowl, stir flour and baking powder together until well mixed.

In a large bowl or using your stand mixer, cream butter and sugar. Because there is more sugar than the usual butter/sugar ratio, the mixture will not get light and fluffy just a creamy look, still grainy.

Add the eggs one at a time, while continuing to mix on low /medium speed.

Add in ricotta, lemon zest and lemon juice, continue to mix on low 3-4 minutes. If you are not a fan, just leave out the zest.

Stir in dry ingredients with a wooden spoon and a dough will form.

Spoon dough 1-2 tbsp. Drops onto a parchment covered cookie sheet.

Bake for 12-15 minutes or until the edges turn a golden brown color.

Transfer to a cooling rack and cool before adding the glaze.

As the cookies are cooling, add lemon juice and zest a little bit at a time while whisking until a smooth glaze forms.

Spoon 1 tsp. of glaze onto each cooled cookie and let the icing harden for a few hours before packaging or freezing.

Hearty Apple Onion Meatloaf: Fall Comfort Is On The Menu!

Fall is definitely the season of comfort. All we need is good food to warm the belly, a cozy sweater to warm the heart, and a fireplace to warm the toes. My menus start including more creamy potatoes, hot soups, chilis, and of course pasta dishes!

I include seasonal fruits and vegetables like apples, pumpkin, and squash whenever possible in my fall recipes. Dress a plain meatloaf for Fall by adding an apple onion glaze and gravy.

Here is the recipe:

Apple Onion Meatloaf

Ingredients:

1-1/2 lbs. ground beef, veal or meatloaf mixture
1 egg
1/2 cup Panko breadcrumbs
2 cloves garlic, pressed
2 small onions, chopped
1 apple, chopped
1 tbsp. Worchesterschire sauce
1 tbsp. Paprika
Salt and Pepper

Directions:

Preheat oven to 350 degrees.

Spray a loaf pan with Pam.

In a frying pan, add 1 chopped onion, 1 chopped apple, 1 clove garlic pressed and cook on low to medium heat covered until tender.

Once tender, I mashed the apples down with a potato masher to create a glaze- like texture.

Wash hands well.

Mix 1-1/2lbs. meat, egg, breadcrumbs, 1 chopped onion, 1 garlic cloves pressed, worchesterschire sauce, paprika, salt and pepper with your hands in a mixing bowl.

Form a rounded rectangular loaf with meat and place inside loaf pan.

Spoon 3/4 of the apple onion mixture on top of meatloaf to coat.

Bake 45minutes or until internal meat temperature reaches 165 degrees and juices run clear when poked.

For the gravy:
Add the rest of the apple onion mixture to a small saucepan. Pour the drippings from the meatloaf pan in the pan and bring to a boil.
Thicken with tempered corn starch if necessary.

Halloween Gingerbread Cake Balls: Bite Sized Desserts!

A spinoff of cake pops, cake ball cookies can be dipped in chocolate and truffled or rolled in powdered sugar and donuted. My most recent topping is a light chocolate drizzle and fun Halloween sprinkles! Wilton makes a 6-mix assortment which includes Halloween shapes and colorful sugars!

Cake balls are made by baking a cake, crumbling the cake in a mixing bowl, adding an icing, rolling the mixture into balls, and decorating for any occasion!

Gingerbread Cake Balls #Halloween
makes 24 balls

Ingredients:

2 cups flour
2 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cloves
1 tsp. cinnamon
1 tsp. salt
1 stick butter,melted
1 cup sugar
2 eggs
1/3 cup brown sugar
1 cup molasses

Preheat oven to 350 degrees.

Sift flour, baking soda, and salt in a bowl and set aside.

Cream butter and sugar in mixer until light and fluffy.

Beat in the eggs one at a time.

Add the brown sugar, molasses, and spices, mixing on low speed.

Slowly add the dry mixture to the wet mixture, mixing well until smooth.

I always grease my cake pans with a tsp. of crisco and coat with flour. Shake off excess flour.

Pour batter into 9X13 pan.

Bake 25-30 minutes and set and a toothpick comes clean.

Mix the icing while the cake cooks.

Glaze Icing

Ingredients:

2 cups confectioners’ sugar
2 tbsp. melted butter
2 tbsp. Milk
1/2 tsp. vanilla

Directions:

Add all ingredients and mix until the powdered sugar is moistened.

Beat with an electric mixer until smooth.

Glaze Icing is the perfect decorative finish for cutout cookies, coffee cakes, and many more sweet treats!

Mix in icing until cake gets doughy.

Roll into 1-1/2 inch balls. (Add a stick before freezing to make cake pops.)

Freeze the cake balls for 2 hours.
(If you do not freeze them, they will be sticky.)

Add a drizzle or dip in chocolate. Finish decorating with your favorite toppings.

Homemade Winemaking : Grapes, Family, Tradition

From the families who have made their own wine for years to the newest generation of winemakers, Pittsburgh delivers the grapes! The areas most popular vendors are Pennsylvania Macaroni Company, Premier Produce, and Consumers Fresh Produce all located in the Strip District.

Ron Casertano, Enologist with Consumer Fresh Produce for 27 years, tells me the grape harvest was early this year with California grapes arriving in early September. The season usually ends on Columbus Day, but with high supply and demand, the fall grape season will run through the end of October.

Loyal CFP Winemaking customers Rudy Ranallo, along with his friends and family, let me spend the day as they pressed their grapes, filled their jugs with juice, and ate a beautiful pasta dinner!

Ranallo says his process is, “The same as my dad’s [process]. Let the grapes ferment for 7 days, stirring them everyday. Press the grapes and bottle the juice. After six weeks, the Saturday before Thanksgiving, we remove the sediment, and let the fermenting continue until Easter.”

Rudy showed me the grape sediment and skins collected from the presser to make wine vinegar. Last years crop made 4 1/2 gallons!

No preservatives, no fancy measuring gadgets, just tradition and instinct.

This year the family streamlined their process buy purchasing a de-stemmer machine.

As was my experience with the Ranallo family, Casertano described the why behind homemade winemaking, “People like to get together and have fun making wine. They eat, laugh, and enjoy! It is an event.”

It sure was and we had a blast!

Because of Pittsburgh’s big interest and little winemaking knowledge, Casertano says there is definitely a market for a how- to class. Wine classes will be offered at Consumers Fresh Produce in the Spring for round 2- South American grapes season in the Spring!

You still have a week or two to buy some juice.

Tim Tassone’s Mac & Gold truck is anything but traditional and Pittsburghers can’t get enough. What makes Tassone’s mac different? Well, everything!

Simple Truck, Simple Idea, with an unexpected twist. When I visited Tim and Athena at a Greentree office park, I never expected a made-to-order fresh mac and cheese for every order. Sounds like a ton of work!

Tassone says it’s all in the name of delivering a phenomenal product to his customers with minimal waste, of course.

A mortgage industry casualty turned chef, Tim Tassone entered the food truck boom with an appetite for success and a unique enough menu to acheive it.  The Mac and Gold truck’s most popular menu item is the lobster mac. Often requested by event staff and customers, Tassone uses real lobster claw meat and tops it with his signature brown butter breadcrumbs. Cannoli Sandwich Cookies

“Leave the gun. Take the cannoli.” Peter Clemenza says this to Rocco who just killed Paulie in the 1972 movie The Godfather. A tubular pastry shell filled with a chilled ricotta, mascarpone cheese, or custard filling, the cannoli has been a popular Italian dessert originating in Polermo.

These cannoli from Colanglo's bakery in Pittsburgh's Strip District are dipped in chocolate. A typical plain cannoli is filled with ricotta cheese and dipped in crushed pistachios. Cannoli are now made with various flavors and toppings.

A twist on traditional cannoli, the sweet chilled cannoli filling can be used in other dessert favorites.

Here is another version of the cannoli dessert:

Cannoli Sandwich Cookies:
(makes 18 whole sandwiches)

Ingredients: Cookies

2 sticks butter, softened
3/4 cup sugar
2 eggs
1/2 cup brown sugar
1 tbsp. Vanilla extract

2 cups All Purpose flour (or substitute 1 cup oat flour and 1 cup All Purpose flour)
2 tbsp. Baking soda
1-1/2 tbsp. Cocoa powder
1 cup semi-sweet chocolate chips

Ingredients: Cannoli Filling
2 cups ricotta cheese
1/2 cup mascarpone cheese
1/4 cup sugar
1 tbsp. Vanilla
2 cups chocolate chips

Directions:

Preheat oven to 350 degrees.

Mix dry ingredients except chocolate chips and set aside.

Using a mixer, cream butter and sugar.

Add eggs and vanilla.

The wet ingredients will create a fluffy mixture when creamed.

Fold in chocolate chips using a spatula.

On parchment paper lined cookie sheets drop 1 tbsp. Dough and space 2 inches apart.

Bake for 10 minutes or until cookies are set and darken a bit.

Let the cookies cool for a few  minutes before moving them to the cooling rack.

Feel free to use just ricotta cheese, sugar, and vanilla. The mascarpone gives the filling a heavier texture.

Spoon onto one cookie and top with another to create a sandwich .

For centuries gondolas were the primary means of transportation in Venice. Today, gondolas are used to give tourists rides along the canals. Lovers kiss under every bridge for good luck in love during the romantic rides.

Gondola Veggie Snack:

Ingredients:
1 avocado
1 red pepper
1/4 cup mozzarella cheese
6 spinach leaves

Directions:

Wash and take the seeds out of the pepper.

Slice horizontally in half and then 4 more times to create 6 gondolas.

Cut and scoop out the green avocado. Mix the fresh avocado with a spoon until smooth and spread a layer on each gondola.

Sprinkle with mozzarella cheese, salt and pepper.

Lean a spinach leaf against the gondola as the oar.

Sweet And Spicy: The Perfect Sauce !

Sriracha is basically Thai "ketchup" and was named from a town called Si Racha!

I am totally shocked when people ask me, “What is Sriracha?” Sriracha is America’s #1 condiment! According to the Huy Fong Food Co., Sriracha is made of sun ripened chiles ground into a paste with garlic.

I have created an amazing spicy, sweet sauce using a Sriracha, honey, brown sugar base. Since being featured by Emeril Lagassee on Good Morning America, fans have asked that I simplify the recipe for a quick sauce. I have been experimenting with the base ingredients and the result is an intense, flavorful 3 ingredient sauce!!

Ingredients:

1/4 cup brown sugar
1/4 cup water
2 tbsp. Honey
2 tbsp. Sriracha

Directions:

Dissolve brown sugar in water. Stir until smooth.

Mix in other ingredients.

Use sauce as Marinade.

Add additional sauce to browned pork, fish, chicken, etc. To create a saucy layer.

Pittsburgh Food Trucks: On Board the Pittsburgh Taco Truck!

Why do Pittsburghers love their food trucks? The Pittsburgh Taco Truck’s owner James Rich says, “People like the uniqueness and don’t expect the quality.” As one of the founding fathers of Pittsburgh’s food truck boom, James has paved the way for newbie trucks.
