10 Minute Holiday Banana Bread!

When your bananas get super ripe, don’t throw them away! They get soft and mushy which is the perfect consistency for whipping up a quick banana bread!

Feeling festive? So am I! Holiday spices take this holiday bread to the next level. Delicious for breakfast or dessert! Enjoy!

Holiday Chocolate Chip Banana Bread
(Makes 1 loaf)

Ingredients:

1-1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. Cinnamon
1 tsp. Ground cloves
3 very ripe bananas
1/2 stick butter, softened
2 eggs
2/3 cup sugar
1/2 cup chocolate chips

Directions:

Preheat oven 350 degrees.

In a large mixing bowl, combine dry ingredients and sift together until blended.

In another bowl, mash bananas with a potato masher or fork. Add butter, eggs, and sugar and mix well with a wooden spoon.

Add dry ingredients to wet ingredients.

Add chocolate chips. (This is the point where you can add 1/2 cup of any other additions like nuts, raisins, etc.)

Grease and flour a loaf pan.

Pour batter into pan and hit it against your work table to even it out.

Bake 45-55 minutes until the bread is cooked through and passes the toothpick test.

Panettone French Toast: A Holiday Breakfast Favorite!!

In our home, we sit down to our Thanksgiving meal in the middle of the afternoon, like a Sunday dinner, between 2-3pm. My typical routine is getting the turkey(s) in the oven and making a beautiful breakfast for the family before starting the side dishes.

Panettone French Toast is a favorite holiday breakfast! Sweet and creamy with a browned, toasted edge, this recipe accentuates the flavors of the season. The panettone is filling enough to hold us over until Thanksgiving dinner is served.

…is a sweet Italian bread from Milan, made once per year in September /October and enjoyed through Easter until they start to dry out. Panettone makes the best french toast!!

Panettone French Toast
(Makes 6 thick slices)

Ingredients:

1 Panettone, sliced into 6- 3/4 inch thick round slices (Save the rounded top slice for toast!)
4 eggs
1/2 cup whipping cream
1 tbsp. sugar
1 tbsp. light brown sugar
1 tbsp. cinnamon
1 tbsp. vanilla
1 tsp. ground ginger
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 cup butter (pan and to butter French toast)

Directions:

Beat eggs in a mixing bowl.

Whisk together all ingredients except butter.

Melt 1 tbsp. butter in a medium pan or a nonstick griddle.

Dip each slice of panettone in the mixture, flipping to coat both sides completely.

Grill until the slices are golden brown, firm (not eggy), approximately 4-5 minutes per side.

Add your favorite toppings and serve! I like to dust the French toast with powdered sugar and add fresh sliced strawberries for color!

A Quick Frittata , Why Nottta?

A frittata is a flat Italian style omelette in which the ingredients are mixed into the eggs instead of being stuffed like a traditional omelette. The top layer is the creative, artistic finishing touch. I like to serve a gorgeous frittata by using vibrant colored vegetables. Like a traditional omelette, a frittata can be healthy, or not.

How to make a healthy frittata:

Use egg whites
Add healthy vegetables
Sprinkle in chia seeds

In this frittata, I wanted to use some beautiful prosciutto cotto. Prosciutto cotto is the highest quality Italian cooked ham with a smooth mild flavor. Perfectly paired with a gooey mozzarella or fontina on a panini, or in this case, baked into a frittata.

Prosciutto Cotto and Mozzarella Frittata

Ingredients:

3 eggs
2 tbsp. milk
1/2 cup shredded mozzarella or fontina cheese
4 slices prosciutto cotto, chopped
1 small tomato sliced
2 tbsp. Oregano
2 tbsp. Parmesan cheese
Salt/Pepper

Directions:

Preheat oven 350 degrees.

In a small mixing bowl, beat eggs with a whisk.

Continue whisking while adding milk until egg turns pale yellow in color.

Pour into a Pam coated 9″ round cake pan.

Top with sliced tomato, oregano, Parmesan, salt and pepper.

Although the mixture is uncooked, the toppings are the beautiful finish of a frittata. Like the red ripe tomatoes, greens pop also such as spinach and kale!

Bake 20-30 minutes or until the egg is cooked through and set.

This is awesome! Congrats to you!! Since October 4th is the first Saturday in October, how about something pumpkin for breakfast? Your house will smell amazing the whole rest of the day! I’m a super pumpkin freak, well until Thanksgiving, and then I’m totally over it- sick of it- done.
I’m thinking 2 ingredients should do the trick? And a muffin pan?

A mom actually contacted me recently about an easy pumpkin muffin recipe for her son’s football team and I have been playing around with different ideas, so good timing!

My “church ladies” taste-tested the same recipe, but with eggs and a larger can of pumpkin last week and they were delicious, but totally too sticky. I took out the eggs and they were great!

Super Easy Pumpkin Carrot Muffins
Makes 16 muffins
Ingredients:
1 box Betty Crocker Super Moist Carrot Cake
1 15 oz. Can Pumpkin Pie Mix (not just plain pumpkin filling) but the pie mix.

Directions:
Preheat oven to 375 degrees.

In a bowl, mix pumpkin into Super Moist carrot cake mix.

Or use mixer on lowest speed.

Fill each circle in the tin 3/4 full.

Muffins will bake and expand- careful not to overfill!

The Summer Of S’mores!

We have been obsessed with s’mores this summer. We don’t camp, yet (gulp) and we don’t have a fire pit at home, so I have tried to incorporate the summer favorite without the traditional sticks and campfire.

It all started with s’mores pudding shots for a party…

S’mores Pudding Shot Cups
Use margarita glasses or plastic dessert cups to recreate the pudding shots.
Grate chocolate on top for elegance.
Layer the ingredients for a mini trifle look.

The kids wanted real s’mores. So, we made the best s’mores…in the toaster oven!!

For a Fourth of July party, I was asked to bring a dessert! So I made a S’mores Trifle using the pudding shot recipe. Yes, it contained alcohol. It was a party!

The recipe definitely needed to be altered! One layer of crushed graham crackers , one layer of pudding, one layer of marshmallow cream, shaved chocolate, and repeat. I used 2 jars of marshmallow cream!

Blueberry Orange Chia Muffins! What an awesome combination!

I love smoothies and muffins for breakfast! Add in superfoods, fruits, and grains, and you will have energy for the day! We love to try different flavor combinations! This morning we tried blueberry and orange…it is delicious!

My basic muffin recipe came from Bethenny Frankel’s Skinny Muffins and it has morphed from there! Enjoy these! Try different flavors and let me know how they turn out!

Blueberry Orange Chia Muffins
(Makes approx. 18 muffins)

Ingredients:
1-1/4 cups oat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 cup sugar
2 tbsp. butter
1/2 cup coconut milk
1/2 cup blueberries
1/2 cup mini clementine slices
1/4 cup chia seeds

Directions:

Preheat oven to 375 degrees.

Spray muffin tin with Pam or line with baking cups.

Mix dry ingredients.

Add wet ingredients, adding fruit last.

Mix well so that each muffin gets a taste of every ingredient!

Makes 18 muffins
(Recipe adapted from Skinnygirl Bethenny Frankel’s skinny blueberry muffin recipe)

Ingredients:

1-1/4 cups oat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 cup sugar
1/4 cup chocolate chips
1/4 cup chia seeds
2 tbsp. butter, melted
1/2 cup Almond Milk
3 ripe bananas, smashed

Directions:

Preheat oven to 375 degrees.
Spray muffin tins or line with baking cups.
Mix dry ingredients in a mixing bowl and add wet ingredients.

Skinny Girl Bethenny Frankel’s Blueberry Muffins!! Plus a Few Extras!

We woke up in the mood for breakfast muffins!  I absolutely love this recipe! It is quick and easy! 5 minutes to mix the ingredients and 20 minutes to bake!  Bonus, they are gluten free!!
Makes 9 muffins!!

Bethenny Frankel’s Skinny Blueberry Muffins

(We add chocolate chips, too! And maybe a spoon of chia seeds!)

Ingredients:
1 1/4 cups oat flour
1 tsp. baking soda
1 tsp. baking powder
3/4 cup sugar
2 tbsp. butter
1 tsp. salt
1/2 cup soy milk
3/4 tsp. vanilla
3/4 cup blueberries
(We add 1/4 cup chocolate chips and 1 tbsp. of chia seeds!)

Directions:

Insert baking cups into muffin tin or spray with nonstick spray.

My name is Terri and I am a breakfast skipper.  BSA- Breakfast Skippers Anonymous, anyone? We need meetings! We all do it! Coffee only in the early AM and by 11 we are shoving anything and everything into our mouths.  On my quest for health and anti-aging, I have incorporated oatmeal 4-5 mornings into our family’s breakfasts.  Boring yucky oatmeal?  No way!  You should know me better than that by now!

Basic Mason Jar Fruit Oatmeal Recipe:
Ingredients:
1/4 cup old fashion rolled oats,uncooked.
1/3 cup almond milk
1/4 cup vanilla Greek yogurt
2 tsp. chia seeds
Additions based on flavor-
1/3 cup fresh fruit/nuts
1 tbsp. honey

Directions:
Add oats, chia seeds, yogurt and almond milk to a mason jar and shake well.
Add fruit and other additions.
Add plastic lid. (Get these on amazon)
Refrigerate overnight and use in 3-4 days.

S’mores Oatmeal!

Ingredients:
1 – portion quick oats, cooked
1 graham cracker crushed
1 tbsp.dark chocolate chips
1 tbsp. raisins
1 tsp. chia seeds
2 tbsp. mini marshmallows
A little drizzle of Hershey’s chocolate syrup!

Directions:
Mix in chocolate chips and raisins, chia seeds and marshmallows.
Top with graham cracker crumbles and drizzle with chocolate syrup!
